The deep chocolate flavor is first expressed in baking the layers of cake. Whipped eggs with a touch of sugar are folded into our blend of melted dark chocolate and deep cocoa powder. The aroma fills the pastry as they bake. Once cooled, each cake is carefully hand-sliced in three layers. Filling is next; a succulent soaking of each cake layer with French raspberry pur&#232e and framboise eau de vie, their tart brightness weaving through the dark, moist crumb.
