Baking the Past

The Linzer Torte is a centuries-old traditional Austrian classic. A pastry born of a different era, it is a recipe that probably would never have been created today. Its base is a dense, buttery, malleable texture, too soft to roll out and very strenuous to pipe. Modern recipes would have lightened it or, as we often see, turned the Linzer into a rollable, cuttable cookie dough. While the cookie form is delicious, a true Linzer Torte is a nut-flour laden short crust topped with a thick layer of berry conserve and a piped lattice top with sliced almonds baked into its browned spicy edges.
