Studded with fresh blueberries, the mousse begins with thick local cream infused with fragrant Earl Grey tea. The cream, fresh eggs, a touch of cane sugar, and lush white chocolate are whipped and folded, creating this light, tender, supple mousse. Carefully enclosed in a circle of checkerboard cake and finished with a white chocolate Earl Grey ganache.
