Golden Loaves of Winter

Our Stollen, a traditional German sweet yeast bread, is buttery, richly studded with raisins, almonds, and crystallized citrus, and redolent of cardamom, nutmeg, rum, and vanilla. This is a pastry that needs adequate time for its flavors to develop. The process begins with a dense butter-yeast dough, slowly double–proofed. Mixing the dough and forming the loaves is a group effort that continues for weeks. First, the stollens are flattened by hand into an oval. The pastry team tightly rolls the flattened ovals, making certain to leave the traditional "lip", a distinctive fold meant to resemble a swaddled baby. Baked until golden, the sweet, buttery aroma wafts through the pastry kitchen. The final steps, a quick brush of butter to retain all of the mingling flavors and then a gentle tumble into aromatic vanilla sugar. Wrapped and sealed, a seasonal delight
