The darkening days at the end of November bring the arrival of a long series of special visitors: The Snowmen!
Their dark chocolate top hats are made in advance, their roasted hazelnut heads inspected and trimmed to size. Fresh clementine zest is added to each batch of ganache as it whips, the sharp scent of orange filling the air. Then the piping begins. Like an outdoor snowman, ours need a good round foundation. The second ball is piped atop the larger base, the centering immensely important. Many hands "head" the snowmen. It’s imperative the slight point at the tip of each roasted hazelnut is angled into the ganache bodies. Checked for posture, the snowmen chill overnight.
Enrobing begins the next morning. One person sends them swiftly through the white chocolate curtain, while our fastest garnishers place their top hats at a furious pace. There is only a brief moment when the dark chocolate top hat can fully bond with the white chocolate couverture.The crisp hazelnut heads add slight variations to the hats — some sit flush, others jaunty, a few pulled down low, and others tipped at a rakish angle. Each with an individual look.
The "eyers" fill their piping cones with dark chocolate. Six dots for each snowman — three buttons on rounded bellies, two eyes, and a nose. It’s fascinating to see how a tiny variation in a single dot can create an expression. Set to cool, they await their boxing. Legions of snowmen, more than 120,000 every winter, each one with a distinct personality all its own.
Capturing the flavors of the season, each Chocolate Snowman is hand-piped with dark chocolate ganache blended with fresh clementines, topped with a roasted hazelnut for the head, and enrobed in white chocolate. Our Snowmen are made individually by hand, giving each a character all its own.
