Fruit, Chocolate, and Precision

A bowl of carefully tempered dark chocolate is centered between two hair-netted, uniformed, gloved chocolatiers. Beside them sit glowing trays of dried fruit — plump split Blenheim apricots, golden crystallized ginger, slices of deep-hued Philippine mango, the distinctive aroma of in-house candied citrus peel. Singular pieces of fruit are plunged into rich tempered chocolate to the correct depth by hand. A swift dab back onto the surface of the liquid chocolate releases the excess from the fruit. Then the fruit is lined up on trays and rushed to one of cool rooms to set up with a crisp break and glossy shine. It is meditative, methodical hand-work yet one that needs an alert, expert eye on the chocolate for consistency and temperature.
