Like all wonderful holiday food preparation, from hand-made pies to the Thanksgiving turkey roasted to a deep burnished gold, our Chocolate Turkeys take time and coordinated effort. The ganache is cooked, cooled, and whipped, and the piping begun. A controlled dollop creates the plump body, followed by the difficult fine piping to form the head and neck — a skill mastered by few. The "feathering" is a group effort, all hands are needed to sort and place the toasted almond tail feathers to give these tasty birds their traditional symbolic shape. The enrobing crew takes over, dipping and monitoring the Turkeys through a curtain of flowing white, milk, or dark chocolate. Rested for shine, given two quick dabs of chocolate for eyes, the Chocolate Turkeys are now ready to flutter onto the holiday table.
